Corned Meat in Tomato Sauce

Corned meat is stewed with tomatoes, onions, thyme, ginger, garlic and curry leaves to make this classic creole dish that has a nice depth of flavour.

Ingredients

  1. 1 can corned meat (lamb, mutton or beef)
  2. 4 tomatoes, chopped
  3. 1 small onion, sliced
  4. 1 tablespoon thyme leaves
  5. 2 curry leaves
  6. 1 teaspoon garlic paste
  7. 1 teaspoon ginger paste
  8. 1 small green chili
  9. 1 tablespoon spring onions
  10. 1 tablespoon coriander leaves
  11. Salt
  12. Pepper
  13. Oil

Instructions

  1. In a pan heat 2 tablespoon oil
  2. Add the sliced onion, thyme and curry leaves and stir fry for 2-3 minutes
  3. Add the chopped tomatoes, garlic and ginger paste, chili and stir well
  4. Add a little water, cover and cook until the tomatoes are 1/2 done
  5. Add the corned meat and mash it
  6. Add salt to taste
  7. Cover and cook until tomatoes are completely done (add a little water if needed)
  8. Turn off the heat and garnish with chopped spring onions and coriander leaves
