Chicken Stew
Chicken is stewed with onions, garlic, ginger, herbs, spices, tomatoes and potatoes to make this traditional Mauritian dish.
Ingredients
- 1 whole chicken, cut into pieces
- 2 potatoes, cut into quarters
- 1 tablespoon thyme leaves
- 3-4 curry leaves
- 1 small onion, sliced
- 1 tables1 tablespoon cumin powder
- 1 tablespoon garlic paste
- 1 tablespoon ginger paste
- 250 grams diced tomatoes
- 2 tablespoons chopped coriander leaves
- 1 red chili, sliced lengthwise (Optional)
- 2 tablespoons oil
- Salt
- Water
Instructions
- Heat oil in a large pot
- Add the chicken pieces and cook for 3-4 minutes
- Remove and put aside
- In the same pot add the sliced onion, thyme and curry leaves and stir fry for 2-3 minutes
- Add the chicken pieces, ginger and garlic paste and the potatoes
- Add a little water, cover and cook for 5 minutes
- Add the cumin powder, stir well, cover and cook until chicken and potatoes are half done
- Add the diced tomatoes, salt and water
- Cover and cook until chicken and potatoes are done
