Chicken Curry
A rustic and authentic quick one-pot packed with tonnes of spices and fragrant coriander, this chicken curry is crazy delicious and so simple to make.
Ingredients
- 1 whole chicken, cut into pieces
- 2 large potatoes, cut into quarters
- 1 small onion, slices
- 1 tablespoon chopped thyme leaves
- 5 curry leaves
- 1/2 tablespoon ginger paste
- 1/2 tablespoon garlic paste
- 3 tomatoes, chopped
- 2 tablespoon curry powder
- 1 cup finely chopped coriander leaves
- 1 cup fined chopped spring onions
- 3 tablespoon oil
- Water
- Salt to taste
Instructions
- Cut chicken into equal pieces and wash thoroughly
- Heat 1 tbsp oil in a pan and add the chicken
- Cook for 3-5 minutes, remove and put aside
- In the same pan heat 2 tbsp of oil and add sliced onion, thyme, curry leaves and stir fry for 2 minutes
- Add the curry powder in the pan and add some water to make a paste
- Add the ginger / garlic paste and add some water, cover and simmer for 5 minutes
- Add the chicken and potatoes, stir well, cover and cook until half done
- Add the chopped tomatoes, salt and more water if required
- Cover and cook until the chicken, potatoes and tomatoes are completely done (check regularly)
- Once the chicken is done, check for the consistency, turn off the heat and garnish with coriander leaves and spring onion
