Cauliflower Stew with Boiled Eggs
Cauliflower and potatoes are slow cooked with spices and tomatoes in a light gravy and garnished with boiled eggs and coriander leaves.
Ingredients
- 1 small cauliflower,cut into flowerets
- 2 medium potatoes, cut into quarters
- 4-5 boiled eggs,cut into halves
- 1 small onion,sliced
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 teaspoon thyme leaves
- 3 curry leaves
- 2 -3 tomatoes, chopped
- 2 tablespoon coriander leaves
- 1 teaspoon oil
- Salt
- Water
Instructions
- Heat oil a large skillet and add sliced onion, thyme and curry leaves and stir fry for 2-3 minutes
- Add the cauliflower and potatoes and a little water
- Cover and cook on medium heat by checking at various intervals
- When the potatoes and cauliflower are half done add the ginger and garlic paste and the chopped tomatoes
- Add salt to taste, and water to preferred consistency
- Once the potatoes and the cauliflower is done add the egg halves and allow to simmer for another 5 minutes
- Turn off the heat and garnish with finely chopped coriander leaves
