Cauliflower Stew with Boiled Eggs

Cauliflower and potatoes are slow cooked with spices and tomatoes in a light gravy and garnished with boiled eggs and coriander leaves.

Ingredients

  1. 1 small cauliflower,cut into flowerets
  2. 2 medium potatoes, cut into quarters
  3. 4-5 boiled eggs,cut into halves
  4. 1 small onion,sliced
  5. 1 teaspoon garlic paste
  6. 1 teaspoon ginger paste
  7. 1 teaspoon thyme leaves
  8. 3 curry leaves
  9. 2 -3 tomatoes, chopped
  10. 2 tablespoon coriander leaves
  11. 1 teaspoon oil
  12. Salt
  13. Water

Instructions

  1. Heat oil a large skillet and add sliced onion, thyme and curry leaves and stir fry for 2-3 minutes
  2. Add the cauliflower and potatoes and a little water
  3. Cover and cook on medium heat by checking at various intervals
  4. When the potatoes and cauliflower are half done add the ginger and garlic paste and the chopped tomatoes
  5. Add salt to taste, and water to preferred consistency
  6. Once the potatoes and the cauliflower is done add the egg halves and allow to simmer for another 5 minutes
  7. Turn off the heat and garnish with finely chopped coriander leaves
