White Gourd and Dried Shrimp Curry
This is a traditional Mauritian dish that combines the saltiness of dried shrimp and the sweetness of white gourd in a delicious and mild curry sauce
Ingredients
- 1 medium white gourd
- 200 grams dried shrimp
- 1 small onion, sliced
- 1 tablespoon thyme leaves
- 3 curry leaves
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 2 tablespoons curry powder
- 1 tablespoon finely chopped coriander leaves
- 1 tablespoon finely chopped spring onions
- Salt
- 2 tablespoon oil
- Water
Instructions
- Soak the dried shrimp in water for about 1 hr
- Peel the white gourd, remove seeds and cut into cubes
- Heat oil in a non stick pan
- Add the shrimp and pan fry on medium heat for about 5-8 minutes, remove and put aside
- In the same pan add the onions, thyme and curry leaves and stir fry for 2-3 minutes
- Add the curry powder and add a little water and the cubed white gourd and mix well
- Add the garlic and ginger paste and cook for about 5 minutes
- Add the shrimp and season with salt
- Add a little water, cover and cook until the white gourd is soft
- Turn off the heat and garnish with finely chopped coriander leaves and spring onion
