Mango Kutcha
Raw grated mango is pickled with red chilli, garlic, turmeric and mustard seeds to make a yellow spicy side dish that can be refrigerated for longer term.
Ingredients
- 2 green mangoes
- 4 sliced red chillies
- 1 teaspoon methi (fenugreek) powder
- 1 tablespoon turmeric
- 50 ml mustard oil
- 2 tablespoons crushed mustard seeds
- 8 cloves of garlic
- Salt to taste
Instructions
- Wash and grate mangoes
- Put the mangoes in a kitchen towel and squeeze off any excess water
- Grind the red chili, garlic and mustard seeds into a fine paste
- Heat oil in a large pan
- As the oil is heated turn off the heat and add the turmeric powder and the paste
- Add the mangoes and salt and stir well
- Conserve in a jar and refrigerate for longer use
