Fish in Sweet and Sour Sauce

Fried fish is cooked with pepper bells, onions, pineapple, corn, tomatoes and mushrooms to make a colourful dish with an impressive contrast of taste.

Ingredients

  1. 500 grams fish fillet
  2. 2 carrots, cut into round shape
  3. 1 green pepper, cut into cubes
  4. 1 red pepper, cut into cubes
  5. 1 medium onions, cut into cubes
  6. 1 tomato, cut into cubes
  7. 1/2 pineapple, cut into cubes
  8. 125 grams, canned mushroom or you can use fresh mushroom
  9. 125 grams, canned whole corn, cut into round shape
  10. 1 tablespoon garlic paste
  11. 1 tablespoon soy sauce
  12. 2 tablespoon sugar
  13. 2 tablespoon vinegar
  14. 2 stands of spring onions, cut into long strips
  15. 1 beaten egg
  16. 1 cup cornflour
  17. Salt
  18. Pepper
  19. Oil

Instructions

  1. Wash fish and pat dry with paper towel
  2. Cut fish into medium sized cubes and add salt and pepper
  3. Put the fish pieces in a large bowl, add the beaten egg and some cornflour
  4. Heat oil in a large skillet and carefully fry the fish pieces
  5. Drain on a paper towel and put aside
  6. Parboil the carrots in some hot water for approximately 5 minutes
  7. In another skillet heat 2 tablespoon of oil
  8. Add the mushroom and sauté for 2-3 minutes, remove and put aside
  9. In the same way sauté the corn, remove and put aside
  10. Heat 2 tablespoon of oil in the same skillet, add the onions, tomatoes, and garlic paste and sauté for a few minutes
  11. Add the carrots, mushroom corn, pineapple and pepper and sauté for a few minutes
  12. In a cup combine the soy sauce, vinegar, sugar together with 2 tablespoon of cornflour and water and pour into the skillet
  13. Add the fish pieces and season with salt and pepper
  14. Add some water if the mixture is too dry and allow to simmer for a few minutes
  15. Turn off the heat and garnish with spring onions
