Fish Stew

Fish is pan fried and stewed with onions, garlic, ginger, herbs, spices and tomatoes to make this traditional Mauritian dish.

Ingredients

  1. 1 kg fish, cut into steak size
  2. 1 small onion
  3. 1 teaspoon thyme leaves
  4. 2 curry leaves
  5. 1 teaspoon garlic paste
  6. 1 teaspoon ginger paste
  7. 3 small tomatoes, crushed
  8. 1 small chilli (optional), cut into halves
  9. 2 tablespoon coriander leaves, finely chopped
  10. 2 tablespoon spring leaves, finely chopped
  11. Salt
  12. Pepper
  13. Oil
  14. Water

Instructions

  1. Season fish with salt and pepper
  2. Heat oil in a pan and pan fry fish for around 4-5 minutes on each side
  3. Remove on an absorbent paper and put aside
  4. In a large skillet, heat 1 tablespoon oil and add the sliced onion, chilli, thyme and curry leaves and stir fry for 2-3 minutes
  5. Add the crushed tomato, the ginger and garlic paste and stir well
  6. Cover and cook for around 15 minutes
  7. Add the fish steaks in the sauce and add salt to taste and water to preferred consistency
  8. Cover and allow to simmer for another 10-15 minutes
  9. Turn off the heat and garnish with finely chopped coriander leaves and spring onion
