Fish Stew
Fish is pan fried and stewed with onions, garlic, ginger, herbs, spices and tomatoes to make this traditional Mauritian dish.
Ingredients
- 1 kg fish, cut into steak size
- 1 small onion
- 1 teaspoon thyme leaves
- 2 curry leaves
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 3 small tomatoes, crushed
- 1 small chilli (optional), cut into halves
- 2 tablespoon coriander leaves, finely chopped
- 2 tablespoon spring leaves, finely chopped
- Salt
- Pepper
- Oil
- Water
Instructions
- Season fish with salt and pepper
- Heat oil in a pan and pan fry fish for around 4-5 minutes on each side
- Remove on an absorbent paper and put aside
- In a large skillet, heat 1 tablespoon oil and add the sliced onion, chilli, thyme and curry leaves and stir fry for 2-3 minutes
- Add the crushed tomato, the ginger and garlic paste and stir well
- Cover and cook for around 15 minutes
- Add the fish steaks in the sauce and add salt to taste and water to preferred consistency
- Cover and allow to simmer for another 10-15 minutes
- Turn off the heat and garnish with finely chopped coriander leaves and spring onion
