Mango Kutcha

Raw grated mango is pickled with red chilli, garlic, turmeric and mustard seeds to make a yellow spicy side dish that can be refrigerated for longer term.


  1. 2 green mangoes
  2. 4 sliced red chillies
  3. 1 teaspoon methi (fenugreek) powder
  4. 1 tablespoon turmeric
  5. 50 ml mustard oil
  6. 2 tablespoons crushed mustard seeds
  7. 8 cloves of garlic
  8. Salt to taste


  1. Wash and grate mangoes
  2. Put the mangoes in a kitchen towel and squeeze off any excess water
  3. Grind the red chili, garlic and mustard seeds into a fine paste
  4. Heat oil in a large pan
  5. As the oil is heated turn off the heat and add the turmeric powder and the paste
  6. Add the mangoes and salt and stir well
  7. Conserve in a jar and refrigerate for longer use
