Kheer Rice Pudding

A traditional indian dessert, rice is slow cooked in boiling milk flavoured with cardamon and fennel powder and garnished with chopped almonds and raisins.


  1. 1/2 cup basmati rice
  2. 2 cups milk
  3. 3 tablespoons sugar
  4. 1/4 cup raisins
  5. 2 tablespoons roughly chopped almond
  6. 1/2 teaspoon cardamon powder
  7. 1/2 teaspoon fennel powder
  8. Water


  1. Soak rice in water for 1hr
  2. Bring the milk, sugar, cardamon and fennel powder to a boil
  3. Add the rice and cook over low heat with occasional stirring
  4. Simmer for about 15-20 minutes until the rice is tender
  5. Add raisins and chopped almonds (You can add some more milk if needed)
  6. Allow to simmer for another 5 minutes
  7. Enjoy warm or cold
