Fried Rice

A traditional chinese dish, steamed rice is stir fried with marinated chicken, prawns, mixed vegetables, spices, eggs and soy sauce.


  1. 3 cups of cooked basmati rice
  2. 2 chicken breasts, cut into small pieces
  3. 2 cups frozen mixed vegetables
  4. 150 grams prawns (optional)
  5. 2 cups of shredded cabbage(optional)
  6. 3 eggs, fried and cut into long strips
  7. 1 small onion, finely chopped
  8. 2 dark tablespoon soy sauce
  9. 4 tablespoon oil
  10. 5 cloves of garlic, crushed
  11. 2 cups of finely cut chives
  12. 2 cups of finely cut spring onions
  13. Salt to taste
  14. Pepper to taste


  1. Marinate the chicken with 1 tablespoon garlic paste, salt pepper to taste
  2. Shell and de-vein the prawns
  3. Marinate the prawns with 1 crushed garlic, salt and pepper to taste and put aside
  4. In a large wok or skillet heat 2 tablespoon oil and cook the chicken
  5. Once chicken is cooked, remove in a plate and put aside
  6. Microwave the mixed vegetables for 5 minutes
  7. In the same wok add the prawns and stir fry for 1 minute and put aside when done
  8. Put the remaining oil in the the wok or skillet and add the onions, crushed garlic and stir fry for a 2-3 minutes
  9. Add the mixed vegetables and cook for a few minutes
  10. Gradually add the rice and chicken
  11. If using prawns add the prawns at this point
  12. Add some soy sauce
  13. Add salt and pepper to taste
  14. Turn off the heat and garnish with eggs, spring onions and chives
