Corn Maize Pudding

Corn meal is cooked on low heat with water, milk, sugar, raisins and vanilla and garnished with grated coconut to make this popular yet simple treat.


  1. 250 grams corn meal (maize powder)
  2. 3 tablespoons sugar
  3. 2 cups milk
  4. 1 teaspoon vanilla essence
  5. 2 tablespoons raisins
  6. 1/2 cup grated coconut
  7. Water


  1. Pour the corn meal in a deep saucepan and add some water to cover it
  2. With a fork mash any floated bits of the corn meal
  3. Add some more water to the corn meal and cook on a low heat
  4. As the corn meal starts to form bubbles add the milk, sugar, raisins and vanilla essence and mix well
  5. Cook on low heat
  6. Stir constantly so that the mixture does not stick at the bottom of the pan and does not burn
  7. Turn off the heat as the milk evaporates and the mixture thickens
  8. Pour into a shallow dish and garnish with grated coconut
  9. Refrigerate until the pudding is set
  10. Cut into desired shapes
