Chicken Stew

Chicken is stewed with onions, garlic, ginger, herbs, spices, tomatoes and potatoes to make this traditional Mauritian dish.


  1. 1 whole chicken, cut into pieces
  2. 2 potatoes, cut into quarters
  3. 1 tablespoon thyme leaves
  4. 3-4 curry leaves
  5. 1 small onion, sliced
  6. 1 tables1 tablespoon cumin powder
  7. 1 tablespoon garlic paste
  8. 1 tablespoon ginger paste
  9. 250 grams diced tomatoes
  10. 2 tablespoons chopped coriander leaves
  11. 1 red chili, sliced lengthwise (Optional)
  12. 2 tablespoons oil
  13. Salt
  14. Water


  1. Heat oil in a large pot
  2. Add the chicken pieces and cook for 3-4 minutes
  3. Remove and put aside
  4. In the same pot add the sliced onion, thyme and curry leaves and stir fry for 2-3 minutes
  5. Add the chicken pieces, ginger and garlic paste and the potatoes
  6. Add a little water, cover and cook for 5 minutes
  7. Add the cumin powder, stir well, cover and cook until chicken and potatoes are half done
  8. Add the diced tomatoes, salt and water
  9. Cover and cook until chicken and potatoes are done
