Fried Rice
A traditional chinese dish, steamed rice is stir fried with marinated chicken, prawns, mixed vegetables, spices, eggs and soy sauce.
Ingredients
- 3 cups of cooked basmati rice
- 2 chicken breasts, cut into small pieces
- 2 cups frozen mixed vegetables
- 150 grams prawns (optional)
- 2 cups of shredded cabbage(optional)
- 3 eggs, fried and cut into long strips
- 1 small onion, finely chopped
- 2 dark tablespoon soy sauce
- 4 tablespoon oil
- 5 cloves of garlic, crushed
- 2 cups of finely cut chives
- 2 cups of finely cut spring onions
- Salt to taste
- Pepper to taste
Instructions
- Marinate the chicken with 1 tablespoon garlic paste, salt pepper to taste
- Shell and de-vein the prawns
- Marinate the prawns with 1 crushed garlic, salt and pepper to taste and put aside
- In a large wok or skillet heat 2 tablespoon oil and cook the chicken
- Once chicken is cooked, remove in a plate and put aside
- Microwave the mixed vegetables for 5 minutes
- In the same wok add the prawns and stir fry for 1 minute and put aside when done
- Put the remaining oil in the the wok or skillet and add the onions, crushed garlic and stir fry for a 2-3 minutes
- Add the mixed vegetables and cook for a few minutes
- Gradually add the rice and chicken
- If using prawns add the prawns at this point
- Add some soy sauce
- Add salt and pepper to taste
- Turn off the heat and garnish with eggs, spring onions and chives
