Prawns in Red Gravy
A delight for the taste buds, this dish is made by simmering prawns in a thick red gravy made up of tomatoes, a blend of spices and lemon juice.
Ingredients
- 15 king prawns (use uncooked prawns)
- 1 medium onion, finely sliced
- 1 tablespoon garlic paste
- 1 teaspoon ginger paste
- 1 tablespoon thyme leaves
- 500 grams canned tomatoes
- 1 tablespoon red chili flakes
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 2 tablespoon oil
- Salt
- Pepper
Instructions
- Clean the prawns carefully by removing the shells and the dorsal veins but leaving the tails on
- Grind the shells in the blender into a fine paste
- Boil 500ml water, add the paste and allow to boil till it reduces to half the quantity
- Allow to cool and blend the paste once more
- Sieve the paste and reserve the thick liquid
- In a pan heat oil and add the sliced onion and thyme leaves and stir fry for 2 minutes
- Add the canned tomato, red chili flakes ginger and garlic paste and cook for around 15 minutes
- Add the blended shell sauce and simmer for a few minutes until the sauce thickens
- Add salt, sugar and lemon juice
- Add the prawns and cook for another 5 minutes
