Prawns in Red Gravy

A delight for the taste buds, this dish is made by simmering prawns in a thick red gravy made up of tomatoes, a blend of spices and lemon juice.

Ingredients

  1. 15 king prawns (use uncooked prawns)
  2. 1 medium onion, finely sliced
  3. 1 tablespoon garlic paste
  4. 1 teaspoon ginger paste
  5. 1 tablespoon thyme leaves
  6. 500 grams canned tomatoes
  7. 1 tablespoon red chili flakes
  8. 1 tablespoon lemon juice
  9. 1 teaspoon sugar
  10. 2 tablespoon oil
  11. Salt
  12. Pepper

Instructions

  1. Clean the prawns carefully by removing the shells and the dorsal veins but leaving the tails on
  2. Grind the shells in the blender into a fine paste
  3. Boil 500ml water, add the paste and allow to boil till it reduces to half the quantity
  4. Allow to cool and blend the paste once more
  5. Sieve the paste and reserve the thick liquid
  6. In a pan heat oil and add the sliced onion and thyme leaves and stir fry for 2 minutes
  7. Add the canned tomato, red chili flakes ginger and garlic paste and cook for around 15 minutes
  8. Add the blended shell sauce and simmer for a few minutes until the sauce thickens
  9. Add salt, sugar and lemon juice
  10. Add the prawns and cook for another 5 minutes
