Crab Soup
Seasoned crabs are stir fried and then stewed with onions, thyme, tomatoes, ginger, garlic and coriander to make this simple and uplifting soup.
Ingredients
- 4 medium crabs
- 1 medium onion, chopped
- 1 tablespoon thyme leaves, chopped
- 3 small tomatoes, crushed
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 tablespoon coriander root and stem
- 1 tablespoon coriander leaves, finely chopped
- 2 tablespoons oil
- 2 red chillies, sliced lengthwise (optional)
- Salt
- Black pepper
- Water
Instructions
- Clean the crabs and cut into serving pieces then season with salt and black pepper
- Heat 1 tablespoon oil in a large skillet and add the crab pieces. Stir fry for a few minutes until they turn to a red color
- Remove the crab pieces and put aside
- In the same skillet heat 1 tablespoon oil, add onions and thyme and stir fry for 2-3 minutes
- Add the tomatoes, ginger, garlic paste and add the crab pieces
- Add some water, coriander roots, cover and simmer for 20 minutes by checking occasionally
- Adjust the seasoning accordingly
- Turn off the heat and garnish with coriander leaves
