Bajia
A popular street food which is easy to make by frying a batter consisting of simple ingredients. It is enjoyed hot with chutney or hot sauce.
Ingredients
- 200 grams flour (besan)
- 100 grams all purpose flour
- A pinch of food colour
- A pinch of bicarbonate
- 1 medium onion finely chopped
- 1/2 cup finely chopped coriander leaves
- 1/2 cup finely chopped spring onions
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 green chili finely chopped (optional)
- Salt to taste
- Water
- Oil for deep frying
Instructions
- Put all the ingredients, except the oil in a large bowl and gradually mix with cold water so as to make a thick batter
- Heat oil in a frying pan
- Drop spoonful of the mixture into the hot oil and fry on medium heat until golden brown
- Drain on a paper towel and serve hot
